Curried Chickpea Salad Wraps
2 cans of chickpeas, drained and rinsed
1/2 cup of plain Greek yogurt
1 tablespoon of curry powder
1/4 cup of finely chopped red onion
1/4 cup of finely chopped celery
1/4 cup of raisins or dried cranberries
Salt and pepper to taste
4 large whole wheat tortillas
Lettuce leaves, for serving
Instructions:
In a large mixing bowl, mash the chickpeas with a fork or potato masher until they reach your desired consistency.
Add the Greek yogurt, curry powder, red onion, celery, and raisins or dried cranberries to the bowl. Mix well to combine all the ingredients.
Season the mixture with salt and pepper to taste, adjusting the seasoning as needed.
Lay out the whole wheat tortillas and place a few lettuce leaves on each one.
Spoon the curried chickpea salad onto the lettuce leaves, dividing it equally among the tortillas.
Roll up the tortillas tightly to form wraps, and cut them in half if desired.
Serve the wraps immediately, or wrap them in parchment paper or foil for later.
