Mexican Bowl

Ingredients

  • 1 Cup rice, cooked

  • 1 Can Black beans

  • ½ large onion, chopped

  • 1 tomato, chopped

  • 1 Avocado

  • 1 Cup shredded lettuce

  • ½ tsp cumin

  • Salt to taste

  • Shredded cheese

Optional: cilantro, lime, salsa, Noochy cheese sauce, sour cream, corn chips

 

Directions

1. Cook rice.

2. In another small pot, sauté onions in a small amount of oil, then add black beans, cumin, and salt to taste.

3. Chop lettuce, tomatoes, and avocado. Arrange ingredients over rice lettuce and beans. Enjoy!
