Portobello Mushroom Burgers with Avocado
Ingredients:
4 large portobello mushrooms, stems removed
2 tablespoons balsamic vinegar
2 tbsp gluten-free tamari
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
4 whole grain burger buns
1 ripe avocado, sliced
Optional toppings: lettuce, tomato, red onion, vegan mayonnaise
Instructions:
In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried thyme, salt, tamari, and pepper to create a marinade.
Place the portobello mushrooms in a shallow dish and pour the marinade over them. Let the mushrooms marinate for 20 min or longer, turning them occasionally to coat evenly.
Preheat the grill or a grill pan over medium-high heat. Lightly oil the grill grates or pan to prevent sticking.
Grill the marinated portobello mushrooms for about 4-5 minutes on each side, or until tender and slightly charred.
While the mushrooms are grilling, lightly toast the burger buns on the grill for a minute or two.
To assemble the burgers, place a grilled portobello mushroom on each bun. Top with sliced avocado and any optional toppings of your choice, such as lettuce, tomato, red onion, and vegan mayonnaise.
Serve the Portobello Mushroom Burgers with Avocado immediately and enjoy!
Self Infinity - a state of autonomy in which one is free from the bondage of illusion or false understanding. Self Infinity is when we take complete responsibility for ourselves, our lives, our reactions and perceptions. When there is no other, there is no one to blame, no victim or perpetrator. We are free from the world of projection and live in the world peacefully without attachment or aversion. Everything is Within. Anything that is perceived as outside of ourselves is only a projection.
